Chocolate Chia Seed Pudding – Sugar Free
I had a craving for chocolate this week, so I made my favorite chocolate chia seed pudding to help ease this craving. Sugar free of course.

There are many options out there in internet land, so I’ve collected my favorite ones so I can look them up when I have a hankering for something in particular.
It turns out, I have been leaning towards chia seed breakfasts for a while now, so I thought it was time I shared how I do mine here.
I don’t always feel like I need to eat in the mornings. Following a ketogenic diet means you don’t feel hungry as often. I also practice intermittent fasting frequently. But if I am hungry, I like to make myself something simple and easy with minimal mess and fuss.
What’s the difference between Cacao and Cocoa?
I usually use organic cacao like this one.
Aside from the changes in letters ;), cacao is less processed. It is usually lighter in color and has a slightly less sweet taste than cocoa. Both are made from the cocoa beans, however cacao has had the butter removed from the beans so what’s left behind is used to produce the cacao powder.

Chia seeds are an excellent source of nutritional value.
Lets look at what makes these little beauties so valuable in a ketogenic diet to help support our well being…
Chia seeds contain polyunsaturated fat (PUFA), monounsaturated fat (MUFA) and saturated fat. If you’ve seen my previous post on fats, you’ll be familiar with these fats being healthy in their natural form.
They are an excellent source of magnesium, calcium, iron and fiber.
Thus making them an excellent start to any day.

Chocolate Chia Seed Pudding
Benefit from a healthy chocolate chia seed breakfast to start your day.
Ingredients
- 2 tbsp chia seed
- 1/3 cup almond milk umsweetened
- 1 tbsp cream
- 3 tsp cacao or cocoa
- 4 scoops stevia powder
- 1/2 tsp vanilla essence
Instructions

Add chia seeds, almond milk, cream, cacao, stevia, vanilla essence and mix till combined.

Leave to sit for at least 5 minutes allowing it to thicken.

Enjoy
Recipe Notes
Can add vanilla stevia in place of stevia and vanilla individually.
Top with chopped fresh strawberries (optional).
